Samuel started Amba after lockdown with a stall at Broadway Market in Hackney, and he's still there every weekend. The menu draws on food from Israel, Iraq, Palestine, Yemen, Jordan, Iran and Syria. The star is a handmade pita, steamed and stuffed with 8-hour slow-cooked lamb or 24-hour marinated chicken, then topped with tahini, zhoug and the mango pickle the business is named after. Mediterranean food is thriving right now, with event attendees of all kind flocking to fresh flavours and lighter options than "classic" festival fare - and Amba does it better than most.
